Here is a recipe that I received from a friend. I made a few small changes to suit our family's tastes but it is a really light, refreshing salad. It would be a great side dish to serve with your Easter meal.
Spring Salad
5 oz. bag of spring salad mix (or greens of your choice)
1 cup cooked edamame
1 -2 tomatoes, chopped
1/2 cucumber sliced*
1/4 cup green pepper, chopped
1/4 cup lemon juice
1/4 cup olive oil
2 teaspoons lemon peel
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
Place salad, edamame, tomatoes, cucumber and green pepper in large bowl. Mix rest of ingredients and pour over salad. Toss to coat everything.
*In honor of Easter, I used a little bunny cookie cutter on slices of cucumber

Where did you find that bunny cookie cutter? My husband would love it if I got one of those. (He had pet bunnies as a child.)
