Chocolate Mint Brownies

This dessert is great for that St. Patrick's Day party.  It is a little time-consuming because you have to chill each layer but believe me, it's worth the wait!

brownie mix (one for 9 x 13" pan)


Prepare brownie mix as directed on package.  Cool completely.






Cream Filling:
2 cups powdered sugar
1/2 cup butter or margarine, softened
1 tablespoon water
1/2 teaspoon mint extract
3 drops of green food coloring

In small bowl combine all ingredients; beat until smooth.  Spread cream filling on brownies.  Cover and chill.

Topping:
6 tablespoons butter or margarine
1 cup semi-sweet chocolate chips

In a small saucepan, over very low heat melt butter and chocolate chips.  Remove from heat and stir until smooth.  Cool slightly.  Pour over chilled brownies.  Cover and chill at least 1 hour before serving.
