Veggie Rice Pilaf

Veggie Rice Pilaf
Veggie Rice Pilaf

1 Tablespoon olive oil
1/4 cup red pepper, diced
1/4 cup onion, diced
1 carrot, finely chopped
1 celery stalk, finely chopped
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup rice
2 cups water
2 teaspoons chicken bouillon

In a medium saucepan, heat oil. Add pepper, onion, carrot, celery, salt and pepper.  Cook 6 - 8 minutes or until tender. Add rice and stir to coat.  Cook for one minute.  Add water and bouillon and bring to a boil.  Reduce heat and simmer, covered, for 20 minutes.  Let stand for 5 minutes.  Fluff with a fork.

Servings:  3 1/2 cups
