Linguine with Herbed Tomato Sauce

I thought in light of it being Lent, I would share this non-meat recipe.  It is quick to make with ingredients that you typically have on hand.  Feel free to add more or less of the herbs and spices.  Remember, crushed red pepper flakes go a long way!!  You can always add some fresh cheese on top such as Parmesan or Romano if you like.

Linguine with Herbed Tomato Sauce

Linguine with Herbed Tomato Sauce
1 tablespoon olive oil                                       
3 cloves garlic, minced
1/3 - 1/2 cup finely chopped onion
3 1/2 cups fresh diced tomatoes (or 28 oz. can of diced tomatoes)            
1 1/2 teaspoons basil
1/8 teaspoon crushed red pepper flakes
1 1/2 teaspoons oregano
salt and pepper to taste
1/2 box linguine (about 8 ounces)

Cook linguine according to directions.  In the meantime, heat olive oil over medium to high heat.  Add garlic and onion; cook, stirring often for about 1 minute.  Stir in tomatoes with juice, basil, red pepper flakes and oregano, salt and pepper.  Cook, stirring occasionally, for 15 minutes. 

Toss linguine with sauce.  Serves:  3
