Since Easter is coming up, I thought I would give you the following recipe. It is nice to make when you have a crowd to feed and it is very refreshing.
lemon cake mix
2 instant lemon pudding mixes (3.4 oz. each)
2 large cartons of Cool Whip (12 oz.)
about 1/2 cup crushed Rice Krispies or yellow sprinkles or crushed candy bar
Make lemon cake mix according to package. Put in greased and lightly floured 15" x 10" x 1" baking pan. Bake at 350 degrees F. for 18 - 22 minutes (springs back when lightly touched). Cool on wire rack.
Prepare pudding as directions show on package.
Cut cake into 1" cubes. Layer cake, then pudding, then Cool Whip in large glass bowl or punch bowl. Make 3 layers. Sprinkle Rice Krispies, sprinkles or crushed candy bar on top. (You can add whatever you desire; crushed almonds or cookies, like shortbread, would add a nice crunch. You can put the topping in between the layers as well if you like).
Remember, this makes a lot!
