Did you know that you can make jam in the microwave? It is so quick! Why don't you give it a try?!
Microwave Peach Jam
1 1/2 to 2 1/4 cups fresh peaches, enough for 1 cup mashed*
1/4 - 1/2 cup sugar**
2 teaspoons lemon juice
1/4 teaspoon butter or margarine
Slice and peel peaches. Cut them up, place in a 2 quart microwave-safe bowl and then take a potato masher and mash them up (if you don't want your jam to be too chunky). Add rest of ingredients and stir. Microwave on high for 8 - 9 minutes until mixture thickens, stirring every 2 minutes. Cool (keep in mind that the mixture will thicken a little more as it cools). Cover and refrigerate. If mixture becomes a little too thick, you can always add water, 1 teaspoon at a time, until it reaches the desired consistency. This will keep in the fridge for several months. You can freeze this as well.
Servings: 1 cup
*I used about 5-6 small to medium-sized peaches.
**I used somewhere between 1/4 and 1/2 cup. Feel free to taste it (be careful -- it is very, very hot!). You can always add more sugar if desired.
Note: Since I had a little more than 1 cup of fruit, I cooked my jam an extra 3 minutes. If you cook yours longer, stir it every minute and check on its thickness so you don't overcook it.
