I don't know about your family, but mine seems to never finish the last bits left in a box of crackers or a package of cookies or a bag of chips. Does your family do this? Well, if you find you have some potato chip crumbs left in that bag, use them for this recipe. Of course, you can make your own crumbs by putting the chips in a baggie (or between wax paper) and roll over them with a rolling pin.
Potato Chip Chicken
4 boneless chicken breasts, pounded thin
2-3 Tablespoons mayonnaise
1 cup crushed potato chips
1/2 teaspoon paprika
1/2 teaspoon oregano
1/4 teaspoon onion salt
1/2 teaspoon parsley
Spray 9 x 13" pan with oil spray. Place chicken in pan; brush tops with mayonnaise. In small bowl mix remaining ingredients. Sprinkle over tops of chicken. Bake in a preheated 425 degree F. oven for 40 - 45 minutes until tender.
Yields: 4 servings
Note: This chicken comes out very moist. I actually used multigrain chips and it tasted great!
