Here is a nice, refreshing treat. I made these the other day and now they are a family favorite!
Peanut Butter Cookie Sandwiches
peanut butter cookies
vanilla ice cream
butterscotch topping
crushed peanuts
Make your favorite peanut butter cookies (I used Better Homes and Gardens version). Cool completely. Working quickly spread about 2 tablespoon of vanilla ice cream (how much depends on size of cookie and how high you want your sandwiches) on half of the cookies. On other half spread about 1 Tablespoons of the butterscotch topping. Cover and freeze for at least two hours (can freeze up to 24 hours). Put two halves together and roll in crushed peanuts (or spoon onto sides). Serve immediately or cover and freeze.
Note: You may want to make lots of these -- they will go fast!!
