Microwaveable Macaroni & Cheese

I don't know about your weather, but around here it feels like Fall even though it's still two days away from officially beginning.  One of my favorite things about this season is eating comfort food and macaroni & cheese is one of my favorites.  This recipes sure beats the stuff in the blue box hands down and it truly is super quick.  It is a great "during the week when you're busy" kind of meal.  You can cook the whole pound of pasta and freeze half of it.  Just unthaw when you want to cook up another batch of this creamy, cheesy, gooey, yummy. . . dish! 

Microwaveable Macaroni & Cheese

Microwaveable Macaroni & Cheese

1 1/2 cups shredded sharp cheddar cheese*
3 slices American cheese, chopped
1/2 Tablespoon flour
1/2 pound pasta, cooked
1 cup milk
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 Tablespoon butter



In a microwaveable bowl mix cheddar cheese, American cheese and flour.  Stir in rest of ingredients.  Cover loosely with wax paper and microwave on high for 3 minutes.  Stir.  Microwave on high for another 2 minutes.  Told you it was quick!!

Servings:  4

*Note:  Mild cheddar cheese just doesn't have the same good flavor, so use the sharp cheddar cheese.
