Health and Fitness

Potatoes are a wonderful source of potassium and vitamin C.  They also contain a moderate source of iron in which the absorption of is helped by the high vitamin C content.

Potatoes are also a good source of  Vitamins B1, B3 and B6 as well as phosphorus, magnesium, folate and riboflavin.

Potatoes contain antioxidants and dietary fiber.   Dietary fiber has been shown to have many health benefits such as helping to lower the risk of heart disease, diabetes and obesity.

They are naturally low in cholesterol.

Potatoes by themselves are not fattening (it's what you put on them that can add the calories!).  One medium potato (with the skin on) only contains about 110 calories.
