Jello Parfait

Jello Parfait
I almost feel like this is not even a recipe because it's only two ingredients!  My mother used to make this for us in the summertime because it is so light and refreshing.  The fun part is that you can use any color/flavor of jello to suit the occasion.

Jello Parfait

3 oz. box of jello
5 - 6 scoops of vanilla ice cream

Prepare jello according to directions on package.  Chill in refrigerator until slightly thickened, approximately an hour.  You do not want it to gel.  Add vanilla ice cream.  Using an electric mixer on medium speed, beat the two ingredients together.  Pour into parfait glasses and chill until set.  Feel free to lick the beaters!!
