Instead of having just plain turkey sausage for dinner, I decided to be a little more creative. My family really liked this dish so I'll be making it again! This could easily be turned into a vegetarian dish just by substituting beans for the sausage.
Sausage Vegetable Skillet
2 Tablespoons olive oil
1 Tablespoon butter or margarine
4 cups potatoes, peeled and chopped
1/2 cup onion, chopped
1/2 cup green pepper, sliced
1/2 cup carrots, sliced
1/2 cabbage, chopped
13 ounces smoked turkey sausage*
1/2 teaspoon garlic powder
1/2 teaspoon parsley
1/2 teaspoon paprika
1/2 teaspoon Italian seasoning
1 teaspoon chicken bouillon granuales
1/2 teaspoon pepper
1 teaspoon seasoned salt
1/4 cup water
In a large skillet, heat olive oil and butter over medium heat. Add rest of ingredients to pan and cook for 20 - 30 minutes until potatoes are tender, stirring frequently.
Serves: 6
*Can use kielbasa instead of the sausage if desired.
