Here is a healthy snack and it doesn't even contain any sugar (except maybe in the chips). You know, I've told you that I have a sweet tooth. These are like dessert to me -- they taste like a peanut butter and oatmeal cookie. It's hard to believe that something without that "sucrose" could be so yummy!
Butterscotch & Vanilla Granola Bars
1/3 cup butter, very soft
1/3 cup honey
1/4 cup peanut butter
1/2 teaspoon vanilla
1/4 cup all-purpose flour
1/4 cup wheat flour
1/2 teaspoon baking soda
2 cups old-fashioned oats (i.e. rolled oats)
1/4 cup butterscotch chips
1/4 cup vanilla chips
Cream butter. Add honey and combine. Add peanut butter and vanilla; mix thoroughly. Stir in flour, baking soda and oats, making sure all is moistened.
Add chips and stir. Press firmly into an 8 or 9" square pan.
If it sticky, can dredge spatula in flour and use to press mixture or even sprinkle some flour on top of mixture and press with spatula. Bake for 18 minutes or until edges start to brown. Do not overbake. Cool completely before cutting.

Of course there are many variations of this recipe. You could use vanilla chips and dried cranberries. You can use nuts and dark chocolate bits. How about raisins and chopped up dates. Use your imagination!
