This is what I am serving with dinner tonight so I thought I would share this recipe in honor of St. Patrick's Day coming soon. I think of Ireland when I think of potatoes, don't you?!!
Red Parsleyed Potatoes
2 quarts water
1 small onion, quartered
1 1/2 pounds (about 16) red potatoes, halved
2 Tablespoons butter
1 Tablespoons parsley
1/2 teaspoon seasoned salt
1/2 teaspoon rosemary
In medium saucepan, bring water to a boil. Add potatoes (wash first) and onion. Cover and cook for 15 - 20 minutes until fork tender. Drain. To saucepan, add butter and melt. Stir in parsley, salt and rosemary. Add potatoes and onion to pot and toss gently to coat evenly.
