I don't know if you this is really an Irish dish but it does have potatoes in it so it counts as least halfway! This is what we're having for dinner tonight along with some rolls and green beans (does green beans count too?!).
Ham Potato Casserole
1/2 package hash brown potatoes (so about 15 ounces), thawed
1 can cream of chicken soup
1 tablespoon dried minced onion
1/2 cup water
3 tablespoons melted butter
1 cup shredded cheddar cheese
1/2 cup - 3/4 cup diced ham
salt and pepper
Put hash browns in a greased baking dish. In a medium-sized bowl, mix the cream of chicken soup, onion, water, butter, cheddar cheese, ham and salt and pepper (to taste). Pour over hash brown potatoes and mix well. Cover and bake for 45 minutes at 350 degrees.
