Zucchini/Squash Medley
1 Tablespoons olive oil
1 large tomato, chopped
1/8 teaspoon garlic powder
1/4 teaspoon thyme
1 teaspoons basil
salt and pepper, to taste
zucchini, cut into small chunks
squash, cut into small chunks
Heat oil in large skillet over medium heat. Add tomato, garlic powder, thyme, basil, salt and pepper. Cover and cook for about 5 - 6 minutes, stirring occasionally. Add zucchini and squash; cover and cook for 10 minutes. Uncover and cook for another 3 - 5 minutes or until the vegetables are tender. Makes 2 -3 servings.
