Microwave Potatoes
4 potatoes, peeled and sliced thin
3 Tablespoons butter or margarine
1/2 teaspoon parsley
salt and pepper, to taste
Spray a 2-quart microwaveable casserole dish with nonstick cooking spray. Arrange potatoes in dish. Dot with butter and sprinkle parsley, salt and pepper over top. Cover with glass lid. Cook on high 10-12 minutes or until fork tender, stirring every 3-4 minutes.
