Microwave Potatoes

Microwave Potatoes
Who says that potatoes are too time-consuming to make?  This recipe proves otherwise.  It is quick, tastes great and is very versatile.  Try using oregano, rosemary or Italian seasoning instead of the parsleyYou can sprinkle bacon bits or even some Parmesan cheese on top as well during the last minute or two.  Be creative! 

Microwave Potatoes

4 potatoes, peeled and sliced thin
3 Tablespoons butter or margarine
1/2 teaspoon parsley
salt and pepper, to taste

Spray a 2-quart microwaveable casserole dish with nonstick cooking spray.  Arrange potatoes in dish.  Dot with butter and sprinkle parsley, salt and pepper over top.  Cover with glass lid.  Cook on high 10-12 minutes or until fork tender, stirring every 3-4 minutes.
