BLT Salad
BLT Salad

4 cups Romaine lettuce, torn
4 slices cooked bacon, crumbled
1 cup cucumber, sliced*
3/4 cup cooked chicken, cubed**
1 tomato
1 teaspoon olive oil
1/4 teaspoon basil

In a bowl, add lettuce, bacon, cucumber and chicken.  Slice tomato.  Drizzle olive oil over slices and sprinkle with basil.  Then chop tomato and add to salad mixture.  Serve with favorite salad dressing.  (I like to eat this salad with no dressing, my husband likes it with Italian and my 12 year old likes his with Ranch!)

*I used a cookie cutter to make "flower" cucumbers.

**I actually made chicken nuggets, which were breaded, the night before and cubed some of the leftovers for this salad.
