I love the chicken in this recipe because it is so moist -- it never fails to come out good. It is absolutely one of my favorites. Plus it makes its own gravy which is really good on mashed potatoes!
Chicken in Creamy Wine Sauce
3 - 4 chicken breasts, pounded thin
2 - 4 carrots, peeled & sliced
1/4 cup red wine*
1 can of cream of chicken soup
2 - 3 Tablespoons dried minced onion
1 teaspoon poultry seasoning
1/8 teaspoon dry mustard
Preheat oven to 350 degrees F. Place carrots in casserole dish and then top with chicken. Pour wine over all. In small mixing bowl, combine rest of the ingredients. Spread over chicken mixture. Cover and cook for 1 1/2 hours or until tender.
Servings: 4
*If you do not have red wine, you can use white wine or chicken broth.
