Roasted Zucchini

Yesterday I mentioned that one way to eat healthier was to eat less processed foods and to eat more whole, natural foods.  Here is a recipe that does just that, plus it uses olive oil instead of butter. It is an easy, quick way to prepare zucchini and by the way, it tastes good too!

Roasted Zucchini

2 Tablespoons olive oil
2 zucchinis, sliced
3/4 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon basil
1/2 teaspoon rosemary



Preheat oven to 450 degrees F.  Mix all together in a shallow roasting pan.  Bake, uncovered, for 15 - 20 minutes or until tender.

Servings:  4
