In honor of Cinco de Mayo, I wanted to share this recipe. Do you celebrate? What dishes do you make?
Turkey Fajitas
1-2 Tablespoons vegetable oil
1 onion, sliced
1 green pepper, cut into thin strips
1 yellow or red pepper, cut into thin strips
2 cups of cooked turkey, cut into thin strips*
16 oz. jar of salsa
8 - 8" flour tortillas
1 cup shredded cheddar cheese
Heat oil in large skillet over medium-high heat. Stir fry onion and peppers until tender. Add turkey and salsa and cook on low heat until heated through.
Put tortillas on microwaveable plate. Place a dampened paper towel on top. Heat in microwave as per directions on package (usually 15 - 30 seconds). Place turkey mixture onto tortillas; sprinkle with cheese. Cheese will melt because of the hot turkey mixture. Fold in ends and then roll tortillas. (In photo, I did not roll the ends so you could have a better view.)
*Pork, chicken or beef can be substituted.
