In honor of May being National Barbecue Month, here is a recipe you can try. It's the one that I promised last week to post so that you could use all those peppers you bought at Aldi's.
Saucy Beef
1 Tablespoon olive or canola oil
1 green bell pepper, cut into strips
1/2 red bell pepper, cut into strips
1/2 yellow bell pepper, cut into strips
1 onion, sliced
1 pound cooked beef, sliced
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
5 Tablespoons soy sauce
1 cup barbecue sauce
3 cups cooked noodles
Heat oil in large skillet. Add peppers and onions and cook for 6 - 8 minutes until they are crisp-tender, stirring frequently. Add beef, garlic powder, pepper, soy sauce and barbecue sauce. Bring to a boil and then simmer for 1 minute or until heated through. Serve over cooked noodles.
Note: Chicken or pork strips can be substituted for the beef.
