This is another great recipe for those busy nights. If you have places to go and people to see(!), you can always chop up the vegetables the night before or morning of to help decrease the preparation time.
In a medium skillet, melt butter. Add onion, celery and pepper. Saute until tender. Stir in chicken, barbecue sauce and water; cook until heated through. Serve on buns.
Servings: 4 - 6
Note: *Pork or turkey can be substituted for the chicken. The serving size is 4 - 6, depending on how much of the meat mixture you like on your sandwich.

2 Tablespoons butter or margarine
1/2 cup onion, chopped
1/4 cup celery, diced
1/4 cup green pepper, diced
1/4 cup red or yellow pepper, diced
2 1/2 cups cooked chicken, cut into chunks*

1/4 cup water
1/4 cup water
4 - 6 hamburger buns
