Slow Cooker Roast Chicken

This chicken is a great one to make when you're on the go all day because your slow cooker does all the work!

Roasting Chicken
Spray oil (such as Pam)
1/2 teaspoon seasoned salt
1 Tablespoon parsley
1 teaspoon paprika
1/4 teaspoon pepper

Rinse chicken and pat dry.  Spray chicken with oil.  Place in slow cooker on top of wadded balls  of aluminum foil (this will prevent chicken from tasting to greasy). Sprinkle remaining ingredients over top of chicken and under its skin.  Cook on low 8 - 10 hours.  

Gravy:

To make gravy, melt 2 Tablespoons butter over medium heat.  Blend in 2 Tablespoons flour and mix until combined.  Add 1 cup of drippings (or you can use chicken broth).  Bring to a boil, stirring constantly.  Reduce heat and cook until thick.  Serve over chicken.

Note:  taste the gravy before serving.  If it needs a little more flavoring, add a chicken bouillon cube or powdered chicken bouillon.  Keep adding until you have the flavor you desire.

Also Note:  The formula to make gravy is 2 - 2 - 1.  Use the following chart to help you.  If you do not have enough drippings to make the quantity you would like, you can add chicken broth to make up the difference.

3 Tablespoons butter, 3 Tablespoons flour, 1 1/2 cup of drippings
4 Tablespoons butter, 4 Tablespoons flour, 2 cup of drippings.
