Omelet Pie

This was the first time making this recipe and we rather liked it.  There are lots of variations for this so make it to fit your family's tastes.  You could add cooked bacon or sausage instead of ham.  Or you could add broccoli or spinach to give it an extra nutritional boost.  Next time I will throw on some chopped chives from our garden to add flavor and color.

Omelet Pie

6 eggs
1/2 teaspoon dried thyme
1/2 teaspoon dried onions*
1/2 teaspoon salt
1/8 teaspoon pepper
3 cups frozen shredded hash browns
1 cup cheddar cheese
1/2 cup diced green pepper
1/2 cup diced cooked ham
1 medium tomato, chopped

Grease a 9" pie plate.  Preheat oven to 350 degrees F.  In a large bowl, beat the eggs, thyme, onions, salt and pepper.  Add in hash browns, cheese, pepper and ham.  Stir until blended in.  Pour into pie plate.  Bake for 40 to 45 minutes until knife inserted near center, comes out clean.  Sprinkle top with chopped tomatoes.

Servings:  6

*If you don't have dried onions, just use 1 tablespoon of fresh chopped onions.
