In honor of July being National Ice Cream Month and because my son requested an ice cream dessert for his 12th birthday, I bring you the following! (I will be posting my chocolate ice cream dessert version as well so watch for it in a few days)
Vanilla Ice Cream Dessert
2 cups finely crushed Nilla Wafers* (reserve 1/2 cup for top)
1/4 cup butter, melted
1/2 gallon vanilla ice cream, slightly softened
3/4 cup caramel ice cream topping
1 1/2 cups finely chopped peanuts
8 oz. Cool Whip, unthawed (or other whipped topping)
Mix Nilla Wafers and butter. Press into a greased 9" x 13" pan. Freeze for 1/2 hour. Spread ice cream over crust. Cover and freeze for 2 1/2 hours. Drizzle ice cream topping over ice cream layer. Sprinkle peanuts over topping. Cover and freeze for 1 hour. Spread with Cool Whip. Sprinkle reserved cookie crumbs over all. Cover and freeze for 8 hours or overnight. This can be frozen up to 2 months. Remove from freezer 15 minutes before serving.

*Can use other cookies such as Golden Oreos
