We got some beautiful peaches in Amish Country so I thought I would try making a peach cobbler. My husband who isn't crazy about peach pie or cobbler really liked this one!
Peach Cobbler
Topping:
1 cup flour
1 cup sugar
1/4 cup butter
1 egg
1 teaspoon baking powder
1/8 teaspoon cinnamon
Filling:
4 1/2 cups peaches (about 10 peaches), peeled & sliced
1/2 cup sugar (or more to taste)
1/8 teaspoon cinnamon
2 teaspoons lemon juice
With pastry cutter, blend topping ingredients. In separate bowl, mix all filling ingredients and place in an 8" or 9" ungreased square pan. Sprinkle topping over peach filling. Bake in 350 degree F. oven for 40 to 50 minutes till bubbly.
Note: Taste the filling before adding the topping. Depending on your taste buds and how sweet the peaches are, you may want to add more sugar or cinnamon.
