I made this for dinner the other day which was so quick to make and oh, did it taste good! I was happy that I made extra for lunch the next day!! Yum!
Sausage Topped Baked Potatoes
4 large baking potatoes
2 Tablespoon olive oil
1 cup chopped onions
1 green pepper, chopped
16 oz. fully cooked sausage crumbles*
1 cup shredded cheddar cheese
Wash and pierce potatoes with a fork. Place on microwave-safe plate; microwave on high 8 - 12 minutes or until tender.
In a large skillet, heat oil. Add onions and green pepper. Cook until tender. Add sausage and heat through. Stir in cheese and heat until melted.
Cut an "x" in top of each potato; fluff pulp with a fork. Top with sausage mixture.
Servings: 4
*I used Jimmy Dean brand but you can also use 1 pound of whatever sausage you like. If you do not use precooked sausage crumbles, do not add oil. Just cook sausage with onions and peppers until browned and cooked through; drain grease. Then add cheese and continue as above.
