Turkey Dinner Muffins |
I know Thanksgiving is a few weeks away but you may want to keep this recipe -- it is a great way to use up those leftovers. I have even made these muffins with stuffing, cooked turkey and gravy that had been previously frozen; just unthaw first before making. I thought this actually tasted even better the next day!
4 cups stuffing
1/2 cup chicken broth
2 eggs
2 Tablespoon butter (melted), divided
1/4 cup onion, chopped
1/4 cup carrots, chopped
1/4 cup celery, chopped
2 cups cooked turkey, chopped
1/2 teaspoon parsley
1/2 teaspoon thyme
1/2 teaspoon sage
1/8 teaspoon pepper
1 1/4 cups turkey gravy
Combing stuffing, broth, eggs and 1 Tablespoon butter. Press into bottom and up sides of greased muffin cups, dividing equally among 18 cups.
Saute onion, carrots and celery in 1 Tablespoon butter for 5 minutes.
Stir vegetables with turkey, seasonings and 1 cup of gravy. If a little too thick you can add a little milk to thin.
Divide into 18 equal portions and add to middle of stuffing cups.
Bake in a preheated 375 degree oven for 18 - 20 minutes. Let them sit for a few minutes then scoop out. Drizzle with heated gravy (can just warm in the microwave) and serve.
