I thought with Christmas right around the corner, you might like to have this potato recipe. It would be a great one to serve with your Christmas dinner. You don't even need to peel the potatoes which gives you a little extra time to open up all those wonderful gifts under your tree! Of course, if you have a large crowd, just double, triple, . . . all the ingredients so you have enough to go around!
Roasted Red Potatoes
2 Tablespoons butter, melted
12 - 14 small red potatoes, quartered
1 teaspoon dried rosemary
1 teaspoon chives, chopped
1/4 teaspoon salt
1/8 teaspoon pepper
Preheat oven to 450 degrees F. Mix all of the ingredients in a small roasting pan. Roast for 25 minutes until fork-tender, stirring after 10 minutes.
Servings: 4
