These chicken nuggets sure are better than those found at fast food restaurants; plus they're healthier. If you're pressed for time, check to see if the butcher at your local grocery store will cut your chicken free of charge. My local grocery store (Giant Eagle) does provide this service to their customers.
Chicken Nuggets
3 boneless chicken breasts
3/4 cup plain breadcrumbs
1 teaspoon parsley
2 Tablespoons Parmesan cheese
2 eggs, beaten
Preheat oven to 375 degrees F. Spray large cookie sheet. Cut chicken into large chunks (chicken nugget size). Mix breadcrumbs, parsley and cheese. With a few at a time, dip chicken pieces into beaten eggs, then breadcrumb mixture. Place on cookie sheet. Repeat with remaining chicken pieces. Bake for 12 - 15 minutes. Serve with your favorite dipping sauce. My 24 year old likes to dip his in barbecue sauce and my 12 year old prefers ketchup!
