Coconut Almond Macaroons

In honor of May 31st being National Macaroon Day, I thought I would offer this recipe for you to try.  There is a downside though. . . you may have to double the batch because they didn't last long in my house!

Coconut Almond Macaroons

5 1/3 Tablespoon salted butter, softened
1/2 cup sugar
2 eggs
1/4 teaspoon almond extract
6 cups coconut

Preheat oven to 325 degrees F.  Cream butter and sugar.  Add eggs and mix well.  Add remaining ingredients.  Drop rounded mounds onto greased cookie sheet (or use parchment or silicone mat).

Bake 20 - 22 minutes or until edges brown.  Let stand for 5 minutes before removing from cookie sheets.
