Can you believe that in a few days the month of July begins? Why is it that summer goes so fast and winter seems to drag on?!
Speaking of July, did you know that it is known as National Ice Cream Month? There are also ice cream food days celebrated as well. For example, July 1st is Creative Ice Cream Flavor Day and July 7th is National Strawberry Sundae Day. July 17th is Peach Ice Cream Day, July 23rd is National Vanilla Ice Cream Day and July 25th is National Hot Fudge Sundae Day.
Of course, ice cream is perfect for that hot July day. Although, I have no problem eating this treat any day of the year!! (Do you have this problem too?!) Receiving an ice cream maker as a gift this past Christmas hasn't helped matters either -- LOL! Actually, it's been fun experimenting with making different flavors. Here is one I made recently that we really liked. Why don't you serve up a scoop so you can celebrate all these food holidays too!
Soft Serve Lemon Ice Cream
1 1/2 cups powdered milk
1 cup sugar
1 1/2 teaspoons vanilla
4 1/2 Tablespoons butter, melted
7 1/2 Tablespoons, plus 1/2 teaspoon boiling water
1 1/2 cups milk
1/2 cup heavy cream
1/2 cup lemon juice
pinch of salt
Using a blender, mix powdered milk and sugar. Add vanilla, butter and boiling water and blend for three minutes, until mixture is thick. Refrigerate mixture until chilled.
Whisk chilled mixture with rest of ingredients. Pour into your ice cream maker and follow the manufacturer's instructions.
