Fresh Apple Cake

Tis the season. . . for apples that is!  So here is a favorite recipe of my husband's.  It came from his aunt with some slight modifications.  Hope it becomes a favorite of your's too!

Fresh Apple Cake

3 eggs
1 3/4 cups sugar
1 cup vegetable oil
1 teaspoon baking soda
2 teaspoons cinnamon
1/4 teaspoon salt
2 cups flour
6 cups of peeled & sliced apples

Grease and flour 9 x 13" pan. Preheat oven to 350 degrees F. Cream eggs and sugar.  Add oil and blend.  Stir in dry ingredients and mix well.  Add apples and combine.  Place in pan and bake for 1 hour or until toothpick inserted in center comes out clean.  Dust with powdered sugar when it's cool.
