At the University of Munster in Germany, researches have found a possible cancer-fighting compound in bread called pronyl-lysine which is made when bread is baking. It is found mainly in the crust. Pumpernickel, whole wheat and other dark-colored breads contain the most pronyl-lysine. So, go ahead and have another slice of bread; just remember to eat the crust too!
