Quick Pizza

Because April is National Florida Tomato month, I thought I would share the following.  This is a great recipe to get your family involved.  Let them create their own pizza; picky eaters are more likley to eat their food when they make it themselves!  So be sure to have cut up veggies (such as green pepper, spinach, mushrooms, onion, and/or broccoli to name a few) on hand to boost the nutritional value.

This sauce is easily adaptable to your family's tastes.  We like garlic so we usually add more.  You can also try different herbs and spices; red pepper flakes would kick things up a notch.  I have even used fresh tomatoes instead of canned ones.  Have fun with it!

Sauce:

2 cloves garlic
2 T. olive oil
16 oz. can tomatoes
8 oz. can tomato sauce
1 tsp. oregano
1 tsp. basil
dash of pepper 




Mince garlic.  Heat olive oil over medium heat and cook garlic for 1 minute (do not brown it).  Chop and drain the tomatoes and add them to the garlic.  Add tomato sauce, oregano, basil and pepper.  Cook until thick, about 20 minutes.  (This sauce is enough for 2-12" pizzas)

Put half of the sauce on a store bought Italian baked shell (or you can make your own crust).  Top with your favorite cheese and toppings.  Repeat with rest of sauce on another Italian baked shell.  Bake at 425 degrees F. for 10 - 15 minutes or until cheese is melted.
