Chicken Rice Casserole

As I stated in my What's For Dinner post, tonight for dinner we were having a chicken casserole.  Here is the recipe that I made.

Chicken Rice Casserole

1 cup rice
1 cup celery, diced
1 Tablespoon butter or margarine
1 1/2 cups cooked chicken
1 can cream of chicken soup
3/4 cup mayonnaise
1/4 cup bread crumbs
1 1/2 teaspoons parsley
2 Tablespoons sliced roasted almonds

Cook rice according to directions.  Cook celery in butter until tender.  Mix rice, celery, chicken, cream of chicken soup and mayonnaise.  Put into a greased casserole dish.  Sprinkle top with bread crumbs, then parsley, then almonds.  Bake, covered at 350 degrees F. for 40 minutes.  Serves:  4
