If you're following my What's For Dinner post, tonight was Sloppy Joes along with a side of sweet potato fries which I love! So, here's the recipe.
Sweet Potato Fries
3 sweet potatoes, peeled and sliced thin
1 Tablespoon olive oil
1/2 teaspoon seasoned salt
1/8 teaspoon garlic powder
1/4 teaspoon thyme
1/2 teaspoon parsley
Preheat oven to 500 degrees F. Spray a cookie sheet with spray oil. In a medium bowl, mix the sweet potatoes and olive oil. Spread onto cookie sheet. Mix the rest of the ingredients and sprinkle half on top of sweet potatoes. Bake for 9 minutes, then flip over. Sprinkle with remaining spices and bake for another 3-5 minutes until tender.
Note: Sweet potatoes do start to brown when peeled, so have everything ready to go before you start peeling them. Feel free to try different spices; I think basil and pepper would be a nice touch!
