Glazed Lemon Bread

I love, love, love lemon flavor so I took a little bit of one recipe and a little bit of another and came up with this one.  In my house, it was consumed in two days -- and it wasn't all me!!

Glazed Lemon Bread

1/3 cup butter or margarine, softened
Glazed Lemon Bread
1 cup sugar
2 eggs
1 Tablespoon grated lemon peel*
1 Tablespoon lemon juice
1/2 teaspoon vanilla
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk

Glaze:
1/3 cup powdered sugar
2 Tablespoons lemon juice

In a mixing bowl, cream butter and sugar.  Add eggs and mix well.  Stir in lemon peel, lemon juice and vanilla.  Combine flour, baking powder and salt.  Add alternately with milk to creamed mixture.

Transfer to a greased 9" x 5" x 3" loaf pan.  Bake at 350 degrees F. for 50 - 55 minutes or until toothpick inserted near center comes out clean.  Cool for 10 minutes; then remove from pan.

Mix powdered sugar and lemon juice and drizzle glaze over warm bread.  Cool completely.

Yields:  1 loaf

*If you do not have lemon peel (I didn't!), you can substitute it with 1/2 Tablespoon lemon extract or lemon juice.  I used lemon extract and this came out very lemony!
