Herbed Baked Fish

June is National Seafood Month so I wanted to give you this recipe.  My favorite recipes are those that are easy and quick and this one meets those standards!

Herbed Baked Fish

4 white fish fillets*
1 cup bread crumbs
2 Tablespoons margarine or butter, melted
1/2 teaspoon thyme
salt and pepper
1/2 teaspoon parsley

Preheat oven to 425 degrees F.  Spray baking sheet with oil spray.  Arrange fish on sheet and season with salt and pepper.  Mix bread crumbs, margarine and thyme.  Top each fillet with bread crumb mixture, pressing firmly to adhere.  Sprinkle tops of fish with parsley.  Bake until fish flakes easily, about 8 to 12 minutes.  Servings:  4
