Eat your zucchini -- it's good for you!  Per the WHFoods.com website (World's Healthiest Foods) just one cup of steamed zucchini gives you 32% of the daily value for vitamin C, 10% for manganese, 7%  for beta-carotene, 2 grams of fiber and 19% of the recommended amount of folic acid all for about 25 calories.  It also has more potassium than bananas.

When preparing zucchini, it is better to steam it rather than boiling or microwaving it.  The reason -- it retains more of the antioxidant activity.  Even if the zucchini has been frozen, it still retains much of its antioxidants.  Of course, it is better to leave the skin on to get the most nutrients possible.

Studies in animals are showing that zucchini helps protect against diabetes and also helps with better regulation of insulin.  It helps with protection of the eye and also appears to have some anti-inflammatory benefits as well.
