Zucchini Corn Blend

I picked the first zucchini from my garden last night!  It's always fun to "pick" your dinner!! 

  

Zucchini Corn Blend

1 Tablespoon olive oil
1 small zucchini, chopped
1/3 cup onion, chopped
1/3 cup frozen corn
1/2 teaspoon basil
pinch of salt
pinch of pepper






Heat olive oil over medium heat until hot.  Add zucchini, onion and corn.  Cover and cook till tender crisp, about 8 - 10 minutes, stirring occasionally.  Sprinkle basil, salt and pepper over all.  Stir till blended.
