My mother gave me this recipe and it is one of my favorites. It is a great dish to make for company as well as for your family.
Chicken Marsala
1 lb. mushrooms, sliced
4 carrots, peeled & cut in strips
4 boneless chicken breasts, split in half lengthwise
4 Tablespoons cornstarch
1/2 cup water
2 Tablespoons olive oil
1 1/2 cups marsala cooking wine
1/2 cup soy sauce
2 cloves of garlic, minced
4 Tablespoons brown sugar
Place mushrooms and carrots in a lightly greased 9" x 13" pan. Put chicken over top.
Combine cornstarch and water and stir until smooth. Mix in rest of the ingredients and then pour over chicken.
Bake uncovered in a 350 degree oven for 45 minutes to an hour.
Note: if you like your carrots not as crisp, feel free to steam them for a few minutes in the microwave before adding to dish.
