Grilled Chicken Packets

I made this meal last week and my husband really liked it.  I liked being able to cook outside and not adding extra heat to my kitchen.  Plus cleanup was a breeze.

Grilled Chicken Packets

2 large chicken breasts, cut into small chunks
1 small zucchini, sliced thin
1 small squash, sliced thin
1 small green pepper, julienned
1 small onion, sliced thin
1 cup broccoli florets
3 small potatoes, cut into small chunks
1 Tablespoon olive oil
1/2 teaspoon oregano
1/2 teaspoon basil
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon garlic powder
1/8 teaspoon red pepper flakes
1 cup cherry tomatoes, halved
1/2 cup mozarella cheese, shredded
1/2 cup Parmesan cheese, shredded

In a large bowl combine the first 14 ingredients.  Spray 4 large pieces of foil (about 12 inches square) with oil spray.  Place one fourth of chicken/vegetable mixture in center of each piece of foil.


Seal foil around mixture.  Then put a second piece of foil around packet and seal.


Grill on medium heat for 25 minutes or until chicken juices run clear.  Remove from grill.  Carefully open each packet.  Divide tomatoes and cheese equally and sprinkle on top of chicken/vegetable mixture.  Reseal and grill for 5 more minutes.

Servings:  4

This recipe is very flexible so add or change ingredients to suit your family's tastes.  I think mushrooms or eggplant would also be really good.  Try using rosemary, Italian seasoning, seasoned salt or another herb/spice.  You can add a little heat with more red pepper flakes or a little jalapeno.  This would also be great to put on a bun and make a sandwich (my husband can attest to the fact that it tasted good this way!).  If you don't want to use your grill, put it in a 375 degree F. oven.  Just make sure your chicken is cooked completely.  Have fun with it!

Note:  I usually add squash to this dish but I didn't have any -- that's why you don't see any in the photos!

  2. The zucchini, broccoli and cherry tomatoes were from my garden. The peppers won't be ready to pick until next week so I just may have to make this again!
