Here is a healthy snack that is quick to make and so yummy to eat. I have also served these at parties and they are very popular. If there is any left, guests want to take them home!
Granola Bites
2 Tablespoons butter
1/4 cup peanut butter
1/3 cup honey
1 cup old-fashioned rolled oats (not quick cooking)
1 cup crisped rice cereal
1/4 cup miniature chocolate chips*
In a small saucepan, melt butter, peanut butter and honey over medium heat for about 1 to 2 minutes until creamy. Remove from heat and cool slightly. Stir in oats and cereal. Add chocolate chips and mix. Drop a tablespoon of the mixture into miniature baking cups. Using a small melon ball scooper made this really easy to do. Set cups on a baking sheet and put in refrigerator for 15 minutes or until set. Store in an airtight container for up to one week.
Servings: 24 miniature bites
*Of course, using dark chocolate would make this even healthier. . . or you can use chopped almonds and/or dried fruit.
