Garden-Style Pizza Sauce

Did you know that yesterday, September 5th, was National Cheese Pizza Day?  I thought I would celebrate by making more pizza sauce.  Okay, the reality was that I still had a whole bowl full of garden tomatoes to use up so I thought homemade pizza sauce was a good way to preserve them!

I adapted this from another recipe I had (but no longer remember where I got it from!) and changed a few things to suit my family's tastes.

Garden-Style Pizza Sauce
Garden-Style Pizza Sauce

4 - 5 medium tomatoes*
1 Tablespoon olive oil
2 garlic cloves, minced
1 teaspoon sugar
1 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon rosemary
1/8 teaspoon pepper
2 - 3 Tablespoons tomato paste

Cut tomatoes in half and scoop out seeds.  Cut tomatoes in large chunks and place in food processor.  Puree until desired thickness.  In medium saucepan, heat oil.  Add garlic and cook for 1 minute or until light brown.  Carefully add tomatoes and stir.  Cover and simmer for 45 minutes, stirring occasionally.

Add remaining ingredients and simmer for an additional 15 minutes, stirring occasionally.  If sauce isn't thick enough, add a little more tomato paste until it reaches desired consistency.

Servings:  1 1/2 cups, or enough for 2-14" pizzas

*I used some Roma tomatoes which work well for cooking.  I also used some yellow tomatoes and threw in a few cherry tomatoes.

Note:  You can add more herbs, salt and/or pepper if you like.  Remember, though, that pizza sauce doesn't have to have as much flavor as marinara sauce because the toppings on your pizza will add some "zip".
