Meatball Subs

Whether you're having a party or not for the big football game, here is a recipe that will "score" with your family.  It is quick and so simple to prepare.  Of course, you can change it up by using different herbs, cheese, etc.  

Oh my, after looking at the photo I want one now and it's only breakfast time!

Meatball Subs

24 cooked meatballs
6 hoagie or sub buns
1 Tablespoon olive oil
oregano
basil
3 cups marinara sauce
1 cup of shredded mozzarella cheese

In a large saucepan, heat meatballs and sauce (stir gently so as to not break meatballs apart).  In the meantime, brush the insides of the buns with olive oil.  Set your oven to broil.  Place buns facing up on a cookie sheet and broil 3 - 5 minutes to toast them.  Watch carefully!

Sprinkle some of the mozzarella cheese on bottom of bread (putting a layer on the bottom will help prevent the bread from getting soggy).  Place four meatballs on each bun.  Add a few spoonfuls of sauce and top with cheese.  Sprinkle with oregano and basil.  Wrap in foil and place on cookie sheet.  Bake in a preheated 400 degree F. oven for 12 minutes or until cheese is melted.

Servings:  6 sandwiches

Note:  You can scoop some of the bread out of the bottom half of the bun so the meatballs fit better.  You can then dry the extra bread and turn it into breadcrumbs.  Or you can cut meatballs in half so they lay flat on the bun.  I think I'll do that next time!
