Cheesy Baked Potato Slices

Last night my book club had a wine and appetizer night so I decided to make my Cheesy Baked Potato Slices.  How can you go wrong with cheese and potatoes -- right?!  This recipes is very versatile.  You can add whatever toppings you prefer, like bacon or sausage, or you could change the seasonings or even the type of cheese.  Play around with it to create your own yumminess!  I'd love to hear about your versions!

Cheesy Baked Potato Slices

1/4 cup butter, melted
1/2 teaspoon seasoned salt
1/8 teaspoon pepper
1/8 teaspoon onion salt
3 large potatoes
1/2 cup shredded cheddar cheese
2 Tablespoons chives, sliced

Preheat oven to 400 degrees F.  Spray cookie sheet with oil spray.  In large bowl, mix butter with seasoned salt, pepper, and onion salt.  Slice potatoes (keep skin on) to 1/2 inch thickness; do not cut too thin or you'll end up with potato crisps!   Add potatoes to butter mixture and stir gently until coated.  Lay flat  in single layer on cookie sheet and bake for about 30 minutes until fork tender, turning once halfway through cooking time.  Remove from oven and sprinkle cheese and chives on top.  Put back into oven and bake until cheese is melted -- this won't take long at all.  If you like your potatoes cheesier, just add more deliciousness!
