I will definitely be making this again. It had all the ingredients for a repeat recipe: quick, easy, healthy and yummy! It was surprisingly moist in spite of using ground turkey and I loved how fast it was to prepare. So, if you want a great comfort food dish and only have a little time to make dinner, try this one.
Mini Turkey Meatloaves
1 pound ground turkey
1 egg, slightly beaten
2 Tablespoons milk
1 1/2 teaspoons dried minced onions
1/4 cup bell pepper, diced*
1/3 cup breadcrumbs
1 Tablespoon ketchup
1 Tablespoon Worcestershire sauce
1 teaspon chicken bouillon powder
1/8 teaspoon garlic powder
1/8 teaspoon black pepper
1/2 teaspoon sage
Glaze:
1/4 cup ketchup
2 Tablespoons brown sugar
3/4 Tablespoons apple cider vinegar
Preheat oven to 375 degrees F. Spray muffin pan with oil spray. Mix all of meatloaf ingredients (do not over mix).
Servings: 12 mini meatloaves
*I used yellow and red pepper but orange or green is fine to use.
Note: if there is a little grease on top of muffins, just blot with paper towels before putting on last half of glaze.

Preheat oven to 375 degrees F. Spray muffin pan with oil spray. Mix all of meatloaf ingredients (do not over mix).
Using an ice cream scooper (in this way you are not having to touch the raw meat, something I do not like to do!), scoop mix into muffin pan. Use back of scooper to flatten the tops a bit.
Mix glaze ingredients. Spread half of glaze over muffins.
Bake for 18 minutes. Take out of oven and spread remaining glaze.
Put back in oven for 5 minutes or until cooked through.
