Vegetable Fajitas

Who says vegetables can't be fun or taste good?  This recipe wraps all that into one healthy dish!  And it is what I'll be making for dinner tomorrow night!

Vegetable Fajitas

1 Tablespoon olive oil
1 medium onion, quartered and sliced
1 green pepper, thinly sliced
1 carrot, julienned
4 oz. can of mushrooms
15 oz. can black beans, drained and rinsed
14.5 oz. can diced tomatoes, drained
2 teaspoon chili powder
pinch or two of dried cilantro
1 cup shredded cheddar cheese*
10 - 12  6" tortillas


Heat oil.  Add onions, pepper and carrots.  Cook on medium heat until they start getting soft, about 3 - 4 minutes.  Add mushrooms, beans and tomatoes.  Sprinkle with chili powder and cilantro and mix.  Cook for another 5 minutes or until tender.  Meanwhile, warm tortillas as per directions on package.  Spoon some of the vegetable mixture on each tortilla.  Add some cheese and roll up.  Can serve with salsa, sour cream and or guacamole.

Servings:  10 - 12 tortillas
